Stéphane Tournié was born in 1969 in the miracle town of Lourdes into a family with a passion for good food.
His approach to cooking
For Stéphane Tournié, cooking is first and foremost about Pleasure with a capital P, along with conviviality and good taste... a pleasure you can eat, simply and without a moment's hesitation. The starting point is of course the produce: good old-fashioned fare, unadulterated and unfussy.
Stéphane Tournié started work at Les Jardins de l’Opéra in 2006 after having been a pupil of Lucien Vanel and André Daguin, big names in the gastronomy of the South West. He learned his trade working for Christian Constant at Le Crillon in Paris among others, also doing his bit of travelling the world with a stint in top French restaurants in Chicago and Singapore.
His travels and encounters, along with the pleasure that going to the market every day gives him: these are what drive Stéphane Tournié's exacting standards and pleasantly surprising nature.
In Place du Capitole, Les Jardins de l’Opéra occupies a former monastery transformed into an eatery that exudes tranquillity, light and discreet luxury. The round dining room, flower-filled internal courtyard and swimming pool, plus individual lounges all combine to give diners a wonderful sense of well-being.
The chef's suggestions
His fricassée of duck foie gras with oysters, creamy ginger bouillon, and also his Bigorre Noir pork with black truffle. And we recommend his cookery and wine appreciation classes (by arrangement).
He is proud of
The abundance of excellent quality produce that has its home in Midi-Pyrénées, and the tendency of chefs to put gastronomy in the limelight and spread the word about the region.
Stéphane Tournié has a penchant for white Gaillac (such as L’enclos des braves), red Madiran and the famous Pacherenc du Vic-Bilh.
We have spotted
Celebrities such as Vanessa Paradis and Johnny Depp, Yannick Noah and Tony Parker savouring Stéphane Tournié's humble yet dazzling talents.
His Michelin star
After 6 years of hard work at Les Jardins de l’Opéra, Stéphane Tournié's star comes in recognition of his high-quality work, which he says is also down to his team.
